Cabbage, Apple, Kholrabi Slaw
This delicious crunchy salad option is high in fiber and simple to add as a side to any entree.

Ingredients

1 large kohlrabi
juice of ½ a lemon
¼ cup dill, chopped
½ clove garlic, minced
1 teaspoon mayo or halal Greek yogurt
salt and pepper to taste
3 tablespoons olive oil
½ head Savoy cabbage, shredded
1 large Granny Smith apple, cored and thinly sliced
Directions:

1. Peel kohlrabi and cut into thin slices, like matchsticks.
2. Whisk together lemon juice, dill, garlic, mayo or Greek yogurt salt, and pepper in a bowl.
3. Whisk in the olive oil and toss with the kohlrabi, cabbage, and apple.
4. Salt and pepper to taste
